Muffin Tin Frittatas

These muffin tin frittatas are easy, customizable and are a great way to have a quick and easy healthy breakfast. They keep for 4 days in the fridge and 3 months in the freezer. This version has a mix of spinach, sundried tomatoes, olives and goat cheese, but make this your own! It’s a great way to use up cooked vegetables in your fridge. The trick is to use cooked or vegetables that won’t be too watery when cooked. Here are some of my favorite variations:


 -Broccoli and roasted potatoes

- Spinach and artichokes (canned artichokes work great here!)

 - Peas, sauteed onions and herbs

 - sauteed leeks and onions

- sauteed peppers and onions
